Chef Stef tells it like it is.

If you have been watching any of my social media posts and tweets, you probably know of my deep passion for cooking using the sous vide technique. Did you know that sous vide is French for "under a vacuum"?

Let me explain that because I am not really putting food under a vacuum. At least not with the ones we clean our floors with. Sous vide cooking is a technique that if you have not tried, you really should because it is fool proof! I love it because it is impossible to overcook or undercook. It is precision cooking that is controlled at a precise temperature under a water bath, and because you are setting precise temperature control of the bath that is the same  temperature as the desired target cooking temperature, you are now able to achieve precise cooking.

You may be thinking that you set a precise temperature in an oven too, right? The difference here is that the food is exposed to heat levels that are much higher than the internal cooking temperature that you are trying to get to, so there is a ton of guesswork in getting a steak to a perfect medium rare of 133 degrees when you cook it in a 400 degree oven. If you take it out too soon, it is undercooked. If you take it out too late, it is overcooked. That can get expensive and disappointing! 

So you see, with sous vide cooking, you are setting the target temperature of the bath which is controlled precisely by the circulator to match the desired target temperature of the food.

It used to be that sous vide was only for fancy restaurants, and they were big and bulky and expensive. Now they can fit in a kitchen drawer.
