Egg Mixture

3 egg whites
1 egg yolk
1 capful sherry
2 TBSP pimento cheese
1 dash pepper
1 bunch chopped chives

Scramblimento Eggs Directions

    Beat 3 eggs (3 whites and one yolk for healthier version) together in a bowl and add 1-2 tablespoons of pimento cheese and a capful of cooking sherry.
    Stir to combine.
    Add some butter or grapeseed oil into a non stick pan over medium low heat.
    Pour eggs in the pan and slowly and continuously  stir in a figure eight motion with a rubber spatula until 90% done
    Put on a plate (eggs will continue to cook) for two minutes and top with some pepper and chopped chives

Recipe notes

This is the healthier version with just one yolk. There is no need to add salt with all the flavors going on, and there is already enough salt in the pimento cheese.
